There is a legal issue right now and the person in question is telling one story to us and another to the cops, etc. If I go to her house and record our conversation (via my voice opt. on my cell phone) will I be able to provide that evidence to the Attorney General to use in court? Any answers (ASAP) would be greatly appreciated. Thanks in advance!
Does she need to be aware that I am recording the conversation?

yes if it allowed by the judge after viewing means and circumstances that lead to the recording and it being verified to suggest it was not fabricated.
A general rule is that if the people engaged in the conversation can reasonably expect their conversation to remain private, then the statute protects that conversation. I’m not an expert, but I would think a conversation in one’s home would be considered an expectation of privacy.
Delaware law addressing telephone recordings: Del. Code. Ann. tit. 11, § 1335(a)(4) It is a violation of privacy (both a criminal misdemeanor and civilly actionable) to intercept a telephone conversation without the consent of all parties.
Only if you tell her she is being recorded. Then you can use it but you can be sure she wont say anything that matters.
